TANGY LEMON RICE

Serves 2

 

What you’ll need:

1 cup of cooked rice

1/4 cup roasted peanuts

10 curry leaves

1 tbsp ghee

1 tsp ginger paste

1 tsp turmeric

1 1/2 tsp red chilli powder

1 tsp mustard seeds

2 dried red chillies

Pinch of Hing (optional)

Juice of 1 1/2 lemons

Salt to taste

 

How to:

1. Heat ghee in a pan. Add mustard seeds, curry leaves and red chillies. Once the mustard seeds start to sputter add in the ginger paste, turmeric, peanuts and red chilli powder.

2. Add the rice, lemon juice and salt and stir everything together.
