I call this scrap poha because you can add literally anything you want (or happen to have lying in the fridge) in here. Bacon, sausages, mushrooms, more vegetables, potatoes…. anything.

Serves 2

Recipe adapted from NDTV Food

What you’ll need:

1 cup preferably stale bread broken into small even chunks

1 cup assorted cooked vegetables or other toppings

1/2 cup peanuts (roasted)

2 tbsp oil

2 tsp mustard seeds

10-15 curry leaves

1/2 tsp turmeric

Chopped green chillies

Salt to taste

Juice of 1/2  a lemon

Red chillies (optional)

Garnish with bacon/ sauteed onions/ coriander/ coconut/ cheese/ whatever really

 

How to:

1. Heat oil in a pan. Add the mustard seeds, whole red chillies (if using) and curry leaves. .

2. Once the seeds start to sputter add the vegetables, peanuts, salt and turmeric. Stir well.

3. Stir in the bread – add a dash of water and saute till heated through.

4. Squeeze in the juice of half a lemon and add garnish.
